Root Vegetable Soup
Surprisingly refreshing, this easy to make root vegetable soup is packed full of nutrients and perfect as a light but satisfying main course or side dish to your favorite sandwich or wrap.

Ingredients:
3 Parsnips
2 Large Turnips
1 Sweet Potato
2 Large Carrots
1 Large Onion
6 Tbsp Vegetable Stock Seasoning
8 c water
Instructions:
Peel and chop parsnips, turnips, carrots, onion, and sweet potato and add to crock pot. Add 8 cups of water and the 6 tablespoons of vegetable stock seasoning. Stir and cover, cooking for 5-6 hours on high, until vegetables are to the desired softness.
Perfected with a sprinkle of this vegan parmesan and a dash of parsley on top!
