Apple Cinnamon Chickpea Muffins

Apple Cinnamon Chickpea Muffins

{grain free, gluten free, plant-based}

Ingredients: 1 3/4c chickpea flour 1 tsp baking soda 1/4 tsp salt 1 tsp cinnamon 1/4c brown sugar (or sweetener of choice) 1/4c pure maple syrup 1 1/2c unsweetened applesauce 1/2c pureed strawberries 2 eggs (or 2 tbsp ground flax mixed with 1/4 c water for plant-based option) 1 tsp Apple cider vinegar 2 tsp vanilla 2 tbsp avocado oil (or oil of choice) Mix sugar + wet ingredient in separate bowl from dry. Combine wet and dry ingredients and gently mix until just combined. Add ins: could add nuts, seeds, or dried fruit (raisins or dried cranberries would be great) Bake at 375° for approximately 15 minutes (may need slightly more or less time depending on oven and size of muffins) Nutrition Facts:

Have you tried baking with chickpea flour? It acts much like white flour with a near similar texture. Unlike traditional white flour, though, chickpea flour is more nutrient dense, naturally gluten free and higher in protein. It’s also inexpensive compared to many other alternative flours. Win-win!
